30 DAY BLOG CHALLENGE DAY 1: Relationship Status



I am married to my soul mate.  We have known each other all of our lives because our mothers are best friends.  They have been friends before we were born.  22 years and counting for us.  We have 5 children (3 boys and 2 girls) ages 20, 19, 17, 15 and 13.  Our 15 year old daughter has Agenesis of the Corpus Callosum (ACC) which carries many characteristics Autism being one of them.  She is such a blessing to our family.  In December 2008 we found out that my husband had End Stage Renal Disease (ESRD) and it has had it's ups and downs but our strong FAITH in GOD help us get through it all.  We are currently waiting on his transplant.  Please keep him lifted up in your prayers and our baby girl.

He is my best friend and means the world to me.  Our favorite things to do are cooking together, going to the movies, hanging out with the kids and being around our family and friends.  I thank him for always being supportive of me and my business ventures.  He doesn't agree with everything and I thank him for his honesty.  He is my #1 Fan and I am his.  Can't wait to see what GOD has in store for us in the coming years.

Operation Skinny Jeans - Look Fabulous for Fall


JOIN me for OPERATION SKINNY JEANS beginning in September.  I am looking for women who want to look their best in their favorite skinny jeans or if you don't own a pair...how about your favorite dress, skirt, etc.

12 weeks to fit into our favorite clothing of choice.   Bring out that old pair of jeans (or any article of clothing you choose) that doesn't fit anymore.

On Day 1:  Take a PHOTO of yourself wearing the painfully tight and maybe not even possible to even button up jeans.  WEIGH yourself in or if you hate the scale as much as I do measure yourself.

Each Week you will do the following:

WORKOUT:  Attend at least 4 group sessions (grab your girls and workout together #bettertogether) of your choice (zumba, etc.) and complete 1 personal workout for a total of 5.

DIET:  Eat healthy! (message me for a meal plan)

TIPS/INSPIRATION/MOTIVATION:  Follow my blog and you will also be added to a private group where I will be sharing recipes, new ideas, inspiration and motivation.

LOG:  You must keep a JOURNAL and log your meals and workouts each day. (I will provide a journal to all participants).

20 Minute Chicken Enchiladas


**I think I will be trying these tonight.  What will be on your dinner table tonight?**

20-Minute Chicken Enchiladas


Quick tip: While the sauce cooks, shred the chicken. For a spicy kick, top with chopped jalapeƱos.
Yield: Serves 6 (serving size: 2 enchiladas and 1 tablespoon sour cream)

Ingredients

  • 1 cup prechopped onion
  • 1 cup unsalted chicken stock (such as Swanson)
  • 1 tablespoon all-purpose flour
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1 (15-ounce) can unsalted tomato sauce
  • 3 cups shredded skinless, boneless rotisserie chicken breast (about 15 ounces)
  • 1 (15-ounce) can unsalted black beans, rinsed and drained
  • 12 (6-inch) corn tortillas
  • Cooking spray
  • 3 ounces preshredded 4-cheese Mexican blend cheese (about 3/4 cup)
  • 1 cup chopped tomato
  • 1/4 cup chopped fresh cilantro
  • 6 tablespoons sour cream

Preparation

1. Preheat broiler to high.
2. Combine first 9 ingredients in a medium saucepan; stir with a whisk. Bring to a boil over high heat; cook 2 minutes or until thickened. Reserve 1 1/2 cups sauce mixture. Add chicken and beans to pan; cook 2 minutes or until chicken is thoroughly heated.
3. Stack tortillas; wrap stack in damp paper towels and microwave at HIGH for 25 seconds. Spoon about 1/3 cup chicken mixture in center of each tortilla; roll up. Arrange tortillas, seam sides down, in bottom of a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Top with reserved sauce and cheese. Broil 3 minutes or until cheese is lightly browned and sauce is bubbly. Top with tomato and cilantro. Serve with sour cream.

Benefits of Dandelion and Detox Update


Started my detox yesterday and my day was pretty good until I prepared Sunday dinner (see above) for the family.  I just ate the greens and corn.  *deep sigh*  I had a number of bathroom runs.  This water really makes you go.  I released a lot of fluid yesterday. Spend Time With Family

                    


Happy Saturday FTF followers.  The one thing that I enjoy doing is spending time with my family.  Cooking is my favorite way to express my love to them.  I got up this morning and prepared a very nice breakfast for them...cracker barrel hash brown casserole, scrambled eggs with cheese, polish sausage, turkey bacon, bacon, buttermilk biscuits, fruit, and cinnamon rolls.  Them coming into the kitchen because they smelled what I was cooking is priceless.

My daughter Tanika is such the little helper even at 15 years old.  She enjoys being my assistant.  Let's see how she does at dinner time.

If you don't get to spend time with your family try to do so.  It is the best thing for all of you mentally and physically.

Welcome everyone.  I am a Christian, a wife and mother of 5.  I started my fitness journey a month ago and it is not easy but I am doing my best to stick with it.  One thing I love to do is try new things whether it is a new recipe, new exercise regimen, new products (as long as they are natural/organic), new music, etc.  This blog is being created because I want to share my journey with others.  I saw my mother go through end stage renal failure at the age of 13.  Spent most of my time learning all about the causes, treatments, medications, life span, etc. even at that age.  After growing up and getting married...I am now seeing my husband going through the same thing.  He went on dialysis back in December of 2008.  Neither of them have it easy but I am blessed to have them both still here in my life.

This blog will contain recipes, health tips, healthy information, exercises, healthy products, fashion, my journey and any thing else having to do with me, fitness and health.  I am a thick girl working hard at getting fit.  JOIN ME!!  Please comment and share your journey with me.  You can also share my blog with others.  I would also love to connect with others bloggers.
